New Food...
Just made a good discovery - Chilli con carne (veggie in my case) and mashed potato, especially if remixed into a shepherds pie like format.
Its a good combo that occurred to me while eating a more traditional chilli with refried beans - and it occurred to me yesterday while cooking bangers and mash that mashed potatoes with baked beans are very similar to refried beans in taste and texture... Bangers and mash rule thou, it should be the English national dish -way better than Fish and Chips, nice bit of onion gravy - lovely... |

Chill con carne with rosti topping - lush. Peel & part boil potatoes (so they're all gluey), grate on top of chilli, sprinkle with cumin seeds and butter, bake or grill.

i have a 'thing' for Rösti
and i suppose that chilli con carne with no meat is called chilli non carne...we have that often. i don't normally like english food, but i love sausages, mash, and onion gravy. |

I don't eat much english food - mostly chinese. However sausage mash and onion gravy is near to the summit of british food achievements (especially if you cook the sausages on a really low heat in a cast-iron skillet and don't prick the skins - mmm so juicy)

ah.. that makes sense. i'm a big fan of garlic mashed potatoes. throw a couple of cloves in while you're boiling the potatoes and mash it up real good with a little cream, sometimes a little sour cream or sometimes some cream cheese, and some salt and pepper and DAMN you've got some good eatin's

OK, here's my mashed potato variant...
As I try to avoid diary products though I tend to do what is known as Rustic Mash, its a bit more freeform, ingredients can be dropped in and out as you please and is deliberately lumpy... New Potatoes with skins on, a leek chopped, a baby white cabbage, some shallots, whole cloves of garlics (plenty), variety of herbs (practically any root veg) - Dill is a particular favourite, it has a creamy(ish) flavour that makes up for the fact that I'm not using butter or milk. Boil everything up, I usually put the other veg in for the last 10 minutes so as to not overcook it. Have to be careful with some veg they have a high water content and can make the mash too soggy (so if I'm using carrots or parsnips - I roast them instead as this dries them out a bit...) Then mash it all up with a fork instead of a potato masher, throw in the herbs and seasoning (lots of crushed black pepper as ever), bit of mustard powder perhaps (although the white cabbage will give it a peppery tang). Add a bit of soya marg or Olive Oil and a splash of soya milk. And then if you're feeling really flash, save some shallots and caramelise them and sprinkle on top, or fry some spring onions and more garlic and mix in at the end... I think next time, I'm gonna try doing a really fiery mash with crushed dried chillis, or maybe with some saffron (though that will get expensive...) |

![]() u should try fried leeks on top of your mash - amazing!! just cut them up lengthwise and fry em in some margarine. one of the best combos ever!! i dont know what the best north american food is - probably some of the southern stuff my grandmother makes...twice baked potatoes (bake potatoes, hollow them out and make mash with cheese out of the middle and put them back in the skins and bake them til crusty on top). but i will have a think about it ![]() |
