Just been eating some recipe that Nigel Slater (he must be like the Jeff Mills of celebrity chefs I reckon, or maybe its Dave Clarke...)
Any road he had some recipe in the Observer Monthly Food supplement about 3 months ago and I only just got round to trying it today and its pretty great.
Admittedly I tried it with some trepidation, as owing to a childhood phobia of onions it doesn't sound all that appetising - particularly given that its practically all onions. Any road I was amazed at how tasty it was and how simple it is, so without further ado...
Baked onions with parmesan and cream
serves 2-3 with rice
onions - 4 medium to large
whipping or double cream - 300ml
grated Parmesan - a good handful
to serve: steamed brown rice for 4
Set the oven at 180/gas 4. Peel the onions and bring them to the boil in a large, deep pot of water. Leave them at a bright simmer for about 25 minutes, until they are tender, then lift them out with a draining spoon. Slice the onions in half from root to tip and put them cut-side down in an ovenproof dish, snugly touching one another. Tip the cream over the onions. Season with salt, pepper and the grated cheese and bake for 25 minutes, till golden and bubbling.
Slater's preferred choice of accompaniment is lashings of cold roast beef and although this isn't an option for me, I have to concur - it would be amazing, but brown rice is pretty amazing - he reckons steaming the rice with a cinnamon stick and a couple of cloves is the way forward. I had to settle for an oxo cube, cos I forgot about that bit...

I dunno what its called but take this big ass turkisch bread and you put some of that sauce that comes with Doritos... the sauce with peppers in it and stuff... Anyway... than you put some tomatos on it and some cheese, but it in the oven for 10 minutes or so... and comence eating. hehe. And that it.

Have been getting into italian food recently, it quite simple but tricky at the same time. But I like Italian food because its quite wholesome and heartwarming. I think Italian food is like the original fusion cuisine - they took a lot of influences from the east and mixed them with their local produce.

last night (mother's day), using leftover roast chicken, i cooked my ma a chicken/mushroom risotto with a bit o tarragon and cream. she really liked it. i thought it was a bit too rich, but that's probably cos i didn't have any white wine in it which would balance the richness..

post party soup recipe
500g organic red lentils
1 'plant' of celery+leaves
500 g organic carrots
3 onions
6 cloves garlic
2 cubes organic vegetable bouillion (to make 1 litre stock
optional non-veggie addition: several rashers of dry-cure/traditional cure bacon, chopped into small strips and fried before adding to soup.
saute onions and garlic until transluscent, before adding chopped carrots and chopped celery.
sauté vegetables for another 5 mins, and add the lentils, stirring them into the vegetables until glossy, then add the bouillion and optional bacon.
add more water until your preferred consistency is reached.
serves 8-10 people.
accompany with lashings of crusty bread and butter.

hmm...never thought of what slater's producer/dj equivalent would be before. something to add to your top trumps maybe grobelaar?
i really like his recipes they are easy to follow and usually are comfort food, my favourite kind...

barry from barry's bootlegs brought me an arrancini (italian rice dumpling) from the kemp town deli this afternoon. which was nice.
im now eating some hershey's kisses
tonight will be nicoise salad.
im really trying to do the superfoods at the moment - salmon, oats, soya based produce, berries (esp. blueberries), broccoli, turkey (not that though), oats, cant remember the others.
i eat all that stuff anyway so its not too hard.

today was my own make of couscous salad.
a large plate covered with dried baby spinach leaves covered with chopped tomatos, cucumbers, yellow onions, and green beens. covered with fresh tomato lentil couscous and topped with extra virgin olive oil and red wine vinegar. served with a side of whole wheat flat bread and roasted red bell pepper hummus.

Have been really getting into my fresh fruit and veggies recently. Since I quit smoking and I don't know if its related, but I had the most awful stomach and bowel problems. So I hit the decent food, cut out the curries and cut down the massive beer intake and now I feel really good...

They always have these going cheap in the Hackney Tesco. In fact the Hackney Tescos is really good for cheap clearance veggies. I suspect this is because they sell a lot of subsistence food, but are forced to carry a core selection of Tesco products that no one around there can afford until they almost have to chuck 'em...
Had the baked onions again for my dinner... leftovers from the other night...

my friend hannah stayed with us on friday night.
she always likes to eat nice food and has promised that if she comes to dedbeat she is going to bring her juicer and loads of cooking implements and yummy food.
it was funny last year seeing her trying to get fresh garlic in the pontins supermarket, to no avail.
anyway she introduced me to honey and cheddar on toast, even nicer if the butter is slightly salted and the toast is wholemeal. its so nice.

I made butternut squash, roasted red pepper and coriander risotto the night before last. have to admit the leftovers tasted nicer yesterday... Must make mental note to let me food stand a little before serving it up...

We also had a roast butternut squash last night - but just roast with garlic not with fancy extras like Grobs. Actually, your combination sounds good. Anyway, didn't think I'd like it but I was pleasantly surprised.
It's quite cool since we sarted ordering one of those organic veg home delivery box things, we get lots of veg we wouldn't normally buy ourselves (as well as all the staples like spuds, onions, carrots etc.) so it means we have to get a bit more creative with the cooking.
Grobs knows his onions !

So easy to fix, just chuck all the contents in the pan, and ready in 7 min.

i made butternut squash gratin on sunday night, with potato, cream, wholegrain mustard, milk and garlic. topped with parmesan and a bit of cheddar.
it was so nice.

Squash rocks full stop. Butternut squash is very nice if you cut it lengthways scoop out the seeds/weird stringy stuff, and stuff it with a Stilton/brown breadcrumb mix, then roast till tender and serve with a sauce made of leftover Stilton and double cream. It's the healthier heart attack option.
I also like the littler round green squash - my favourite way with those is to cut a 'lid' off the top, scoop out the seeds etc. and fill with sour cream and chopped garlic - then roast with the lid on. Either of these is a great Sunday roast substitution for the non-meat eater, i.e. me.
Currently eating much less interesting but no less tasty food - Quorn pate & cucumber sarnie, Worcester sauce crisps, apple, banana, clementine (not all at once though).

This sounds really tasty, think I too may be doing some stuff vegetables of some description this weekend… Yeah, I’m veggie too, for some reason people think that means we can’t enjoy a Sunday roast dinner…
Peppers and aubergines are nice to stuff too, but I’m continually at a loss as to why they are still so expensive. I don’t buy my veggies from the supermarket any way. Have been thinking about getting one of those organic boxes delivered, but I’ve heard the selection can be a bit hit miss, on variety and quality – so I reckon it might be up to Stokey for the farmer’s market.
I've been eating noodles and curries a lot.
easy to cook. bloody tasty. loads of meat.
also a new noodle shop opened down the road, if I can't be bothered cooking I go there......so like, I go there a lot.

After what seemed like a tireless search, I've finally found some bowls that are of a suitably pleasing size and form for serving soup noodles. Couldn't believe how difficult it was, all the bowls seemed to either be too flat like a pasta bowl, or too small.
Its got to be deep, but also enveloping, as if you might imagine soaking your face in their so you can catch all the aromas...

Just cooked Databombers and M_H a bonza sunday pie sesh...
Toad in the hole, made with veggie sausages and halloumi cheese - next time just going to do Veggie Toad in the Hole with all halloumi, it totally rocks...
Accompanied by nutmeg mashed potatoes, rosemary and garlic roast vegetables with asparagus and sprouts sauted in butter and garlic and topped with red onion and red wine gravy.

I just went a bit wild at Sainsbury's on wednesday, so we've got lots of nice stuff in the fridge.
Breakfast: big bowl of fromage frais with chopped up mango, nectarine and strawberries
Lunch: I made some smoked mackerel pate, a variation of my mother-in-law's recipe. It's dead easy and really lush: peel the skin off a few smoked mackerels, and chuck the flesh in a bowl with a big spoonfull of Quark cheese, a squeeze of lemon, two finely chopped spring onions, a finely chopped gherkin, a tiny dollop of tomato paste, a splash of worcestershire sauce and some salt and pepper, then mash it up with two forks. I had it on Vogel linseed and soya bread toast. With a lovely cup of tea.

Knid V esq, thank you for the smoked mackerel pate recipe! will def try that. here's the vinaigrette version of the butter/caper sauce. it works for tofu and a few vegetables as well. flounder, sole, cod, pompano, tilapia and mahi mahi for the usa, are the mild fishes matching this delicious and simple sauce: melt 2 tablespoons of butter in a saucepan (moderate low heat), add 1 teaspoon of balsamic vinegar and 1 teaspoon of drained capers, cook until heated through (about a minute). remove and stir in 2 tablespoons of minced flat-leaf parsley (other parsley is fine too), add optional salt and pepper to your taste. done! i always double all the ingredients for approximately a pound of fish.

Just went out for dinner... had cauliflower and truffle soup, and because my wife liked the taste of it so much (it was pretty fucking lush) i let her switch starters for the last bit, so i had some devilled duck livers too... then roast beef with yorks puds etc, which was a bit disappointing as the veg and pud were a bit dry... my own stupid fault for ordering roast late sunday evening - the veg had probably been roasted that morning then sat keeping warm and drying out all day. The strawberry pavlova was nice though, although the meringue was fluffy not chewy in the middle - a sure sign that it's been cooked in a hurry.

I just done chicken breast drenched in lemon juice and extra virgin olive oil for moisture then grilled and sliced up on top of crunchy lettuce and tomato with strips of hot roast red pepper, and loads of dressing made of plain yoghurt, mayo, lemon juice, fistfuls of fresh tarragon and german mustard.

croissant sandwiches made w/ smoked turkey and cheese w/ chips and iced tea...ate it out by the beach..(there was a nice sandy crunchy element to them, but it was still tastey as ever!!)

it can be fantastic when the truffle flavor is balanced right - I'm just in Belgium which is a great place for foodies anyhow. That prosciutto certainly sounds like I'd like to have it visit my breakfast table ;)

I made guacamole for the first time, Fajitas are the lazy quick food option in my house so I often buy pre-made guacamole too.. but its normally shit.

it's for meals like this that I am grateful for an authentic mexican sis n law....
she makes this dish called "Ropa Vieja" which is this seasoned meat like fajita except its all broken and soft w/ extra little hot seasoning (don't know what) and then she makes this fresh diced cilantro and onions mixture to put into the tortillas...OMGOODNESS....
btw ropa vieja means - old clothing...cause that's what the mixture looks like..a pile of brown old clothing..
doesn't sound very appetizing, but I promise you....w/ some hot sauce and a plate of yellow rice... u forget about how the meat looks...
fajitas tho..are also a specialty at my bros house....my sis n law seasons and my brother bbq them on the grill....i love sunday evening meals at my family's house...:)

I've just been down the chippy too. I had cod, Mrs Knid had a steak and kidney pukka pie.
@Steev, yr kind of right, there are some modern restaurants that do the classic english food in an unpretentious way - Frankins on Lordship Lane being a great example - they do great things with pigeon, pig, chard, nettles etc etc... but the best place of all to find real English food is in either a pub or cafe that make their own steak'n'kidney puddings etc.

Aye Franklins is nice, although a bit more pretentious than english food really needs to be at times I think. It's not often restaurants beat the best home cooked food I find. I hope no tourists actually makes a special visit to a chippy to buy a pukka pie now though.. I think it takes years of context to appreciate them :)

Like a silly bugger I forgot there were some mange touts peas in the fridge which would have been great with that if i'd steamed them in time but no matter it was nice.
