Before eating,
Dump the old/new lettuce in a very hot water (around 50C/122F, say, a very very hot bath temperature?).
Wait 2 min.
It's now crispier than the fresh ones.
The atoms of the water are moving faster around this temperature,
they went into the lettuce really fast.
Hence the crisp.
Also if you want to keep your lettuce green and not turning them into reddish color,
do the same thing mentioned above when the lettuce is still green.
(Only this time, you do not have to wait 2min)
It will stay green.
You just shocked the lettuce with the hot water.

you are supposed to use cold water.
Soak the lettuce in the cold water with a piece of coal for ten minutes.

that's what I was thinking while reading this...I alway thought
hot water would actually wilt the lettuce...not to mention..
eating warm lettuce doesn't sound right...

i was under the impression that at low pressures, the temperature of vaporisation was reduced.
im not sure as in the vacuum of space, the water content of the lettuce wouldnt dissipate in such a manor as to offend your palate

You don't have to eat it warm.
I should have put this line in, too.
"You can rinse it with cold water afterwards"
Even a single leaf of lettuce can be crisp when dumped in this hot water.
And it is said that it's crispier than the fresh ones.
