- Ristretto (espresso with less water basically) is a must in every coffee house.
- Melted cheese sandwiches aswell, with pesto and pastrami!
- No 'Nu-Jazz'! That shit makes me wanna go on a fake Gucci/Louis Vitton-bag owner killing spree.

I'd definitely go for the baklava. But don't have turkish coffee if you are near a main road. Once in San Francisco I ran across the road without looking after a rake of that. Nearly got killed :)

Me and the Mrs have a not-very-serious dream of opening a cocktail bar... maybe when we're old and have some savings to blow... but anyway, 'global tapas' is the theme we though for the food. Easy makings, can be anything from pickled herrings to morroccan style little fried fish to kofte meatballs to patatas bravas and tortillas. Basically anything that can be prepared before and is good for people who want to sit and eat/drink for a long time...

I think it's very noble to put some thought into helping career drinkers.
Kind of like a stationary 'meals on wheels'.

what u should get in your cafe:
sandwiches, but not fancy ones, just like cheese in some bread and ham or salami in bread. maybe with a bit of tomato but nothing else.
samosas.
you need to have stuff like soya milk sorted out.
ginger tea (made from real ginger) and mint tea made from real mint

I'd have a selection casseroles with mashed or roast tatties. I'm the king of casseroles and I love the idea of having a real soup kitchen sort of vibe to an eating establishment... I would say bangers and mash - but then it'd sound like I'm pitching at the upmarket, downmarket grub demographics - which I'm not. I more imagining an English/European version of one of those Turkish /Kurdish places you get in Dalston.
OK, slightly beyond the remit of a coffee shop, but that's what I'd like to do, well running some sort of cafe/bistro type thing...
I think bistro is the cheffy term when your restaurant serves proper grub...

In fact the last time I was in Smallfish records (they never seem to have any records that I want) but I did enjoy sitting downstairs in the cafe. Looks like they're baking their own cakes down there - how cool is that - baking cakes in a record shop - the ultimate job surely?
